The classic shelf moment: the small bottle is $6, the double-size jug is $9.50 — 21% cheaper per ounce, so the rational shopper grabs the jug. Three months later, a third of it expires and the jug goes in the trash. The error was baked in at the shelf: the tag prices what you buy; your wallet pays for what you use. Here is the math that separates the two.
Effective unit cost: one formula fixes the decision
effective unit cost = total price ÷ (quantity × finish rate)
The jug: $9.50 for 64 oz is $0.148/oz on the tag. But if history says you finish 65% of jumbo sizes: 9.50 ÷ 41.6 oz = $0.228/oz — more than the small bottle’s $0.188 (6 ÷ 32). A 21% shelf saving became a 21% real loss, and the pivot was the finish rate.
The breakeven version: minimum finish rate = bulk unit price ÷ small unit price. Here: 0.148 ÷ 0.188 = 79%. Ask yourself, “am I 80% sure I’ll finish this?” — if the answer hesitates, take the small one.

The model compares cost only. It cannot decide food safety or extend a package date.
Estimating your waste rate honestly
- With history: how did the last identical purchase end? Finished = 0%; tossed a third = 33%. Your own history for the same item is the best predictor available.
- Without history: conservative category baselines — dry goods and paper products ≈ 0–5%; frozen food ≈ 10–20% (freezer burn, oblivion); fresh produce and bread ≈ 20–40%, the magnitude household food-waste research consistently finds. Two purchases of tracking will calibrate your real number.
- For dated items, add a time check: weekly usage × shelf life ≥ package size, or the waste is scheduled at checkout. Using 3 oz a week with a 6-month shelf life caps you at 78 oz — the gallon jug is a planned donation to the drain.
Three costs hiding beyond waste
- Storage rent. Stockpiles occupy square feet you pay for. In a small city apartment, the “warehousing fee” on three months of paper towels quietly eats part of the discount. Tight-space households: this line is not a joke.
- Prepaid consumption. Buying three months ahead is an interest-free loan to the store. One item, trivial; every category stockpiled at once, a real float.
- The abundance effect. The more stock is visible, the more casually it gets used — bigger pours of detergent, faster-vanishing snack boxes. Consumer research finds larger packages reliably accelerate consumption, which erodes the unit-price edge directly. For anything that eats itself (snacks, soda), bulk is often a double loss: more spent, more consumed.
The sorting rule
- Buy bulk without thinking: no expiry + stable usage + gap ≥15%. Toilet paper, detergent, trash bags, canned goods — the warehouse store’s genuine sweet zone.
- Compute first: long-dated items (rice, oil, frozen) — run the time check and the finish-rate breakeven.
- Default small: fresh food, bread, first-time products, and everything that gets eaten because it’s there. Capture the discount with repeat small purchases and sale timing instead.
